Sar's devil food pasta

Tomorrow I start my new job as a REAL NURSE! ZOMGGG.
So today I am chilling at home. Getting myself ready. Having a bit of a pamper day. And one of my favourite things to do on rainy days like this is to browse pinterest. Click HERE to learn about pinterest from a previous blog I have written. So I am looking through all of these photos of food because I am the biggest foodie, and that has given me the idea to share my favourite pasta recipe with you all! It is a bit of my own creation because I started with a simple online recipe and then just added all my own stuff to it. Beware it is around 4374892379384 calories. Hence the name devil food pasta. But one serve won't hurt right?

So the thing I love most about this recipe is how easy it is to change for your own preferences.

So here is basically what you need:

  • Whatever pasta you prefer. I like fettucine because I like thicker pasta
  • Whatever green veggies you like. I like to use broccoli, spinach, asparagus and peas. But all or none of these is fine.
  • garlic!!!
  • butter
  • olive oil
  • two types of cheese, cheddar and parmesan for example. Or Mozzarella would work as well.
  • white wine
  • Juice of half a lemon
  • salt and pepper
  • As an option, prawns would be good in this

Now I don't measure things out. Because that is for fancy people. This recipe is all about the feels.
Now salt some water and put it to boil. And get your pasta on right away. Because it hardly takes any time at all to make the sauce. Fettucine takes 13 minutes ish to cook. Depending on how you like it. So make sure your pasta is actually cooking before you start the sauce.

SO while all that business is happening put a couple of nice big glugs of olive oil in a fry pan. Then add your garlic. Don't be stingy with it, I take a couple of teaspoons from a jar of minced garlic (I ain't scared to offend people with garlic odour). If you went for stalkier veggies like broccoli or asparagus, I would add that now to get it softening. After you have had that in there for about a minute, melt in a nice slab of butter. Around two table spoons I guess. Then add some white wine and your lemon juice. Once again there is no measuring. But don't go too crazy with this or it will be too liquidy. Then add your salt and pepper to taste (the cheese will add some saltiness so you don't need too much of that, so I am more about the pepper with this one). So keep this simmering until it reduces slightly, which really just means when you think "ahh that'll do". Then you can add your two cheeses and melt them in. Stir stir stir. Once it is all melted and has formed a nice sauce, I would flash fry the optional prawns in oil in another pan, then add them lastly to the final mixture and stir them through.

Then you are pretty much done. Strain your pasta. Put the pasta back in the pot you boiled it in. Pour the sauce over it. Stir it through. And voila. Clogged arteries and pure bliss!
What I like about this is that I always have the ingredients at home. So it can be made anytime.
I've tried it with cream, breadcrumbs, mushrooms, shallots and cherry tomatoes as well. It is just about tweaking it for your personal tastes.

Hope you enjoyed this different sort of post.
Let me know if you decide to give it a go.

    xx Sar
